Looking to add excitement to your meat case? Learn how several recently launched cuts, collectively known as Beef Value Cuts, can add variety and flavor to your customers' shopping carts at a great price.

What are Beef Value Cuts? They are 10 new steaks and roasts that fill the price/value "void" between premium steaks and ground beef at retail. The great value of these cuts is one of several successful messages retailers have used to introduce these new cuts to their customers.
More and more retailers are realizing the benefits of bringing these cuts into their meat cases. In fact, the number of retailers offering one or more Beef Value Cuts in the meat case increased from 1,000 in 2001 to more than 9,000 in 2006. One of these retailers, Big Y, was highlighted in a Retail Spotlight in the March 2007 issue Retail Beef Blast. They saw immediate results when they introduced Flat Iron steaks to their full-service case. Read details of their experience here.
As more retailers have brought Beef Value Cuts to the case, sales of Beef Value Cuts have increased dramatically. In 2007, pound sales increased to more than 16.5 million pounds from 7.1 million pounds in 2006. That's an increase of more than 132% in one year! In 2007, Beef Value Cuts pound sales accounted for 2.5% of pound sales for all cuts from the shoulder and round, up from a 0.8% share in 2003. Through the first quarter of 2008 (1/1/08 - 3/30/08), more than 4 million pounds of Beef Value Cuts have already sold nation wide, accounting for 2.4% of pound sales for all cuts from the shoulder and round. These recent increases are due in large part to an increase in case-ready programs, like Kroger's, that have made the flat iron more available at retail.
