Makes 6 servings
1-1/2 pounds beef Sirloin Tip Steaks, cut 1/4-inch thick (6 steaks)
1/3 cup all-purpose flour
1-1/2 teaspoons chili powder
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/4 cups dry unseasoned bread crumbs
6 lime wedges
Hot cooked rice, hot cooked mashed potatoes, salsa, guacamole
|1.||Beat eggs in shallow dish until blended. Combine flour, chili powder, salt and pepper in second shallow dish. Place bread crumbs in third shallow dish.
|2.||Dip each beef steak into flour mixture, then into eggs and then into bread crumbs to coat both sides. |
|3.||Pour oil to 1/4-inch depth in large nonstick skillet. Heat over medium-high heat until hot. Place 1 to 2 steaks in skillet (do not overcrowd). Cook 2 to 4 minutes for medium rare doneness, turning once. (Do not overcook.) Remove steaks; drain on paper towels and keep warm. Repeat with remaining steaks and oil.|
